OK!!!!

Happy, totally goofy thread - - - your best Christmas (or Holiday) treat recipes? Wanna share?

And no.... I PROMISE I won't add any health disclaimers/warnings etc etc etc blech. LOL.

(Isn't it so that baking/cooking for the ones you love, and at special times of year are calorie-free, and damn good for your mental health??? *smile*)

So I offer - -

Butter Tarts

1 pastry recipe (or frozen tart shells) 1 egg, beaten 1/3 cup real butter 1 cup brown sugar 2 tablespoons milk 1/2 cup raisins 1 teaspoon vanilla

I use frozen tart shells from the store because I cannot make pastry. Divide the raisins up and drop them into the unbaked tart shells. Combine the rest of the ingredients and whisk together. Bake at 450 degrees F for 8 minutes, then reduce the temperature to 350 degrees F - continue to bake 15-20 minutes until crust is golden brown. Cool on wire racks.

I usually double the recipe :)

Hmmmm.... I wonder if I have some raisins..... migrating the the kitchen......

Our freezer is now packed with home made chocolate chip cookies meant to be taken home for the holidays. As an admitted choc-o-holic, my strength and resolve are tested every time I open the freezer.

Actually it is, since i have been baking for the last couple of days.

Here is one of my favorites: (slightly modified from the original to accommodate my wheat intolerance.)

1 cup (2 sticks) butter (real butter)

1 cup brown sugar

1 tspn vanilla

Cream together until smooth, then add:

1 cup oat flour

1 cup rice flour

pinch salt

Mix all together until a soft dough. (here's where you can add things like a cup of chopped pecans, or raisins or whatever you like)

Roll into a log on floured board, chill, then slice. Place slices on cookie sheet and bake at 350F for about 14 to 16 minutes.

My mum's recipie for Tiffin:

4oz butter - 8oz crushed, plain biscuits (eg. rich tea) - 2tblsp golden syrup - 2tblsp drinking chocolate - 1tblsp sugar - lots of chocolate for topping

Melt butter, syrup, drinking choc and sugar in pan - do not boil. Add crushed biscuits and mix. Press firmly into greased tin and refridgerate. Once cooled, top with melted chocolate and refridgerate again. Cut into squares.

I know it sounds sickly and a bit too easy (yes to both), but its really lovely and very bad for the figure!

Mmmmmmm, sugaaar, chocooolatte and COOOKIESSSSSSSS!!!!!

These are so, so, YUMMY!!! My mum used to make them and now I don't miss a year! They are quick, easy and no bake. :)

Chocolate Marshmallow Roll

Directions:-

Beat together; 1 egg and 1 cup icing sugar

Blend in; 1/4 cup margarine 2 squares melted unsweetened chocolate 4 cups miniature marshmallows. (multi coloured are more fun)

Divide in 3 portions and roll in desiccated coconut. Wrap in waxed paper and chill.

This will be best if stored in the refrigerator 2 to 3 days OR frozen. Slice and serve.

Yield:- 3 dozen

Edited to add: you roll each of the three portions so they look like logs, then roll them in the coconut. ;)

Golden syrup is pretty much the same thing as corn syrup. I have always used it for recipes that call for corn syrup. ;)

Rice crispies are almost universal although they may be called different things other places. Snap, crackle, pop... :-D

Edited to add: The drinking chocolate would be like Cadbury's drinking chocolate. Drinking chocolate is made with chocolate instead of cocoa and usually has some sugar or sweetner in it. I guess you would say over on this side of the pond hot chocolate.

Thanks for clarifying 841, but just to add:

I don't know what corn syrup is but as 841 substitutes it, it sounds similar to golden syrup - golden in colour and very sweet and sticky!

Drinking chocolate (to make a mug of) rarely needs to be sweetened; just add water or milk for a hot drink. So yes, sounds like 'hot chocolate' to me. Cadbury's do make a good one, but 'own brands' are a suitable alternative.

Unlike rice crispie cakes, tiffin is denser and heavier as the biscuit soaks up a lot of the other ingredients, rather than being coated by them.

I read on wiki that golden syrup can be used as a substitute for corn syrup, but I wouldn't, as I think the tastes are quite different. Do you have treacle over there? If not, I'd use honey as it has a similar consistency to golden syrup. We hardly use corn syrup for any cooking over here (unless it's for an American recipe) and I've heard nasty things about it, so I might just be biased against it.

We have rice crispies in Australia, and I've seen them in the UK too.
