I enjoy working with both types; those with no D/s experience and those with experience. If I had to choose between one or the other, my personal preference would be the ones with no experience. This is not because of any "virgin novelty excitement." It's so I could start with a clean slate and train them to my personal preferences vs. trying to re-train someone who may have learned unwanted behaviors from other Doms/Dommes.
