I'm just making some gingermuffins, that I found in a Finnish magazine Mother sent me.

Here's the translated recipe:

100g margarine

1dl farinesugar (brown sugar)

2 eggs

200g curd or soured milk

1 teaspoon of a mix of ginger, cloves and cardamom

1 teaspoon of ground cinnamon

2.5dl wheatflour

2.5 teaspoon baking powder

Mix the margarine and sugar soft, add eggs and curd, mix again, add the spices, mix, add the baking powder mixed into the flour. Mix some more.

Divide in 12 muffin/cupcake forms, put in the middle of the oven at 200C for about 12 minutes. Take out, let cool a little and sprinkle powdered sugar ontop.

Here's the Earl Grey truffles. I haven't made this recipe yet, so I can't vouch for it, but it seems sound based on the other truffles I've made.

Tea Truffles

1 1/2 cups whipping cream (sez the recipe; heavy cream is better) 3 tablespoons loose tea (green, oolong, black, what ya like) 1 pound bittersweet chocolate, finely chopped cocoa powder or powdered sugar paper candy cups

Melt chocolate in the top half of a double boiler. Remove chocolate from heat.

Over medium heat, carefully bring the cream to a boil; add tea, remove from heat and cover. Steep as long as you generally like your tea steeped (for black tea, which I drink, I steep 3 minutes).

Strain cream into the melted chocolate and return the double boiler to the heat; warm and stir until mixture is smooth. Pour into a bowl, cover with clingwrap and refrigerate overnight or till form (at least 4 hours).

Remove chilled ganache from fridge, roll into 1" balls and roll each ball in cocoa powder or powdered sugar to coat. (this can be a messy process since the ganache will want to melt at body temerature. Work quickly in a cool area, keep your hands dusted with cocoa or sugar, and accept a delicious, if a bit smeary, chocolate coating on them.) Place in candy cups. Store in refrigerator. Bring to room temperature 20 minutes before serving. Good for gifts, not so good for mailing.

I can answer that. Not cheesecake. I tried to make my first ever cheesecake with yogurt cheese and it was a disaster.

I have made this with Neufchatel cheese and it was wonderful. I've also altered my Pumpkin cheesecake, the consistency was to thin so i added a couple tablespoons of flour and it was fine too. It probably depends on the recipe itself though, Neufchatel cheese is thinner than cream cheese which could cause problems.

GUILT-FREE CHEESECAKE

1/2 c. fine graham cracker crumbs 4 tsp. butter, melted 1 c. low-fat cottage cheese 2 (8 oz.) pkgs. Neufchatel cheese 3/4 c. sugar 2 tbsp. all purpose flour 1 1/4 tsp. vanilla 1/4 c. skim milk 3 eggs 1 c. fresh strawberries 1/4 c. low-fat plain yogurt 2 tsp. skim milk

Combine crumbs and butter. Press onto bottom 8 inch springform pan. Beat undrained cottage cheese until smooth. Beat in Neufchatel, sugar, flour, and 1 teaspoon vanilla. Add eggs; beat until combined. Do not over beat. Stir in 1/4 cup milk. Turn into pan. Bake at 375 degrees for 45 minutes. Remove sides of pan. Chill. Slice berries; arrange on top. Drizzle with mixture of yogurt, 2 teaspoons milk, and remaining vanilla. I used Kahlua for the last part, probably because i was out of vanilla. :) Grocery shopping around here doesn't happen until i am down to Italian dressing and ketsup.

I personally think that as with any sacrament, the nature of cheesecake is to transcend guilt :)

Now this is my kind of thread! lol First i will start with a tip: with baked goods i always use unbleached flour. i find that whatever youre making turns out a lot fluffier and softer. Now my first contribution: almond bark bars. Ingredients: 1 3/4 lb almond bark, 2 cups peanut butter, 2 cups rice crispies, 2 cups peanuts, 1 lge bag mini marshmallows (the colored ones make it more fun). Directions: melt the almond bark and peanut butter then in a large mixing bowl mix in the rice crispies, marshmallows and peanuts. then drop dollops onto wax or parchment paper and let them cool. You can freeze them and i must admit i prefer eating them frozen, no idea why lol i also prefer mine without the nuts so i usually cut the peanuts to one cup and half of them with no peanuts. As nut allergies are fairly common i find this a good practice. Hope you enjoy

i gave up my childhood religion because it transcended far to much guilt..i have plenty of sins i commit on a daily basis, so desert needs to be clean. :0

Actually i can't eat sweets without Percocet to kill the headache.

i've been asked for this recipe four times today so far. Anyone wanting to make banana bread for the holidays or anytime this one is excellent. i substitute yogurt for the sour cream, i've used many flavors and all have been great. French vanilla was probably our favorite. i use three bananas rather than one cup, and half Splenda brown sugar. i also toss it all in a bowl and mix, but i have a mixer that is to powerful, it may not work with one that couldn't power the space shuttle.

Cathy's Banana Bread INGREDIENTS

1 cup mashed bananas 1 cup sour cream 1/4 cup margarine 1 1/3 cups white sugar 2 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch pan, or two 7×3 inch loaf pans. 2. Combine banana and sour cream. Set aside. In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and banana mixture. Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Spread the batter evenly into the prepared pan or pans. 3. Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center of the bread comes out clean. MODIFICATIONS

I added 3 bananas instead the recommended 1 cup. Of the 1-1/3 cup of white sugar, I used brown sugar for 1/3 cup. Others have added chopped walnuts to this. You can add about 1 cup of chocolate chips to this for a yummy chocolate chip banana bread recipe.
